The purpose of fishing in this game is basically to get mats to upgrade current gear, and get materials for crafting gear. A secondary use is for getting the ingredients to craft a potion that gives you extra stamina to play another dungeon or two. Everything else is basically to feed your fishing skill.
このゲームでの釣りの目的は基本的にクラフト素材を得ることである。二番目に、スタミナ回復のポーションを得るための素材を得ることである。どっちにせよ釣りスキルを上げる必要がある。
The game will give you a quest once you reach level 10 to get you introduced to the idea behind fishing. It's basically but X item, go fish for a specific fish, come back, repeat different fish. Honestly if you can't read it in game, why would anyone assume you'd read it in a guide.

The majority of what you catch thereafter will be the 4 fish types that you can stockpile to have on hand for future stamina potion crafting. You can also catch blue bordered fish, 4 types that I've found so far, that give 1/2/4/8 xp towards your fishing skill. These you'll want to get to reach 200 xp total in fishing skill by level 20.

The main thing you're looking for is the barrels. The barrels give random mats, in different numbers that start at lvl 20. Which is when you're able to actually start crafting. So while it is possible to just stockpile the barrels and crates, you can also get the chaos crystals and gems for refining your weapons and armor to higher levels. Usually comes in one, but I've gained 10 in one opening as well. So useful for building up your next tier of gear to have when you finally hit that next level.

The final item I've found is yellow bordered fishing permits, that grant 1 hour of fishing rights to the special version the fishing holes. You have to be 10 levels higher to use both the permit and the fishing hole, so level 20 is the earliest you can make use of one. It states you have higher chances of getting better rewards, but since it's timed you will be wanting to use the better baits with the reduced cast time. The permits stack on one another, and seem to be designed to take time off only when you are using the fishing hole.
また、特別な釣り場での許可証を釣ることもある。許可証を使うと特別な釣り場で1時間だけ釣りをすることができる。ただし、特別な釣り場での釣りには通常より高い釣りスキルのレベルが要求される。特別な釣り場では通常の釣り場よりも良いものがつれるが、時間制限があるため高級なえさを使ったほうが良いだろう。
So there's the what, the game provides the how. Now it's a matter of how you want to go about it.
First you want to change the way the game operates, so you don't have to hate life staring at your character gimp about everytime they catch or don't catch something. Go into the system menu and choose to switch it to windowed mode. The game freezes in some cases if you try to alt-tab to another window and stops fishing. With it started in window mode, you can do whatever you wish and still be fishing in the game without issue. If you're heading out, make sure the power features on your comp don't hybernate or shutdown as well.
釣りやるならウィンドウモードで放置しろ
From my experience, the only difference in bait quality is cast time. There seems to be no difference in catch qualites between the highest and lowest baits. So starting out, get as many of the cheap baits as you can before starting. Repair any gear you aren't upgrading first, so you don't go broke and need to repair after.

I haven't bothered timing it, but I generally go with 1 minute for common bait, 30 seconds for the highest tier bait. It really doesn't matter to me yet, but I might double-check when I hit level 20 and start using the special permits. But so far I have 5 hours already, so depending on frequency at the special ponds bait might not be as big an issue. Either way, there's not much call for using anything other than standard 1k bait unless you're in a rush for some cheapy fish the first few days.
特別な釣り場以外では一番安いえさ使っとけ
Getting a lot of common fish is pretty nice early on, it allows you to get the stockpile going so even if you don't have time to fish later on, you still can get the daily potion.
